Ich habe Zöliakie und darf aus medizinischen Gründen keine Speisen essen, die glutenhältiges Getreide oder daraus hergestellte Produkte beinhalten.
Das bedeutet:
Keine Produkte aus Weizen, Roggen, Gerste, Dinkel, Kamut und Hafer sowie alle daraus hergestellten Lebensmittel wie Mehl, Grieß, Brösel, Brot, Gebäck, Teigwaren, Knödel, Soßen, Kuchen, Waffeln etc.
Gibt es auf Ihrer Speisekarte für mich geeignete Speisen oder können Sie bei der Zubereitung die oben angeführten Lebensmittel weglassen wie z.B. die Sauce mit Maisstärke oder Kartoffelmehl binden und das Fleisch, den Fisch oder das Gemüse ohne Mehl oder Brösel zubereiten?

I am suffering from celiac disease and therefore because of medical reasons I am not allowed to eat any foods which contain gluten-containing cereals or products of these.
This means:
No products from wheat, rye, barley, spelt, kamut and oats as well as products of these like flour, semolina, breadcrumbs, bread, pastry, noodles, dumplings, sauces, cakes, wafers etc.
Are there any dishes on your menu which are suitable for me or can you prepare a meal without above mentioned foods e.g. to use maizestarch or potatoflour for the sauce and to prepare the meat, the fish or vegetables without flour or breadcrumbs?

In Austria ingredients containing gluten have to be declared on the food packaging (together with other allergens) and we have also the international glutenfree symbol on many of our products.
If you go shopping without the food-list, avoid products which mention one of the following ingredients on their labels:
Mehl – flour (usually wheat-flour)
Weizen – wheat
Gerste – barley
Roggen – rye
Hafer – oats
Semmelbrösel – breadcrumbs
Griess – semolina
Waffel – wafer
Don’t buy mixed or breaded meat products – frozen or fresh – like FASCHIERTEN BRATEN, FASCHIERTE LAIBCHEN = FLEISCHLAIBCHEN, CEVAPCICI, WIENER SCHNITZEL, CORDON BLEU and anything that says PANIERTE on its label.
Places to stay & eat
Hotels and boarding houses
Hotels and pensions in bigger cities usually offer bed and breakfast and those in the country side also offer half and full board. The Austrian Coeliac Society keeps a list of those hotels which offer gluten-free meals. Higher priced hotels offer a breakfast buffet. Some hotels offer glutenfree breakfast on special request.
Restaurants
In addition to eating in a “Restaurant” you can also take meals in a “Gasthaus” which offers typical Austrian cuisine, usually for more reasonable prices. In Austrian cooking flour and breadcrumbs are used very often, even with vegetables!
Please take the German dietary explanation with you, then the staff in the restaurants will help you to find glutenfree dishes.
Try to choose one of the following dishes which traditionally are prepared gluten-free:
Suppen – Soups:
Hausgemachte Bouillon = klare Rindsuppe – Self-made Bouillon (thin soup, broth)
mit Ei oder Reis – with egg-yolk or rice
Klare Gemüsesuppe – Plain vegetable soup
Hauptspeisen – Main courses:
Tafelspitz – Beef, boiled
Brathuhn, Grillhuhn (Hendl = Huhn) – Chicken, fried or grilled
Forelle blau – Trout, steamed
Grillspeisen, Grillspieß (Fleisch oder Fisch) – Grilled meat or fish
McDonalds Hamburger (ohne Brot-Laibchen!) – McDonalds hamburgers (without roll!)
Beilagen – Side-dishes:
Reis – Rice
Erdäpfel = Kartoffel (mit Petersilie, Röst, Brat Salz-Erdäpfel, Erdäpfelschmarren, Pommes frites -Potatoes (with parsley, sauté, fried, boiled, french fries)
Gemüse (nur “englisch”) – Vegetables (only prepared the “English way”)
Salat: alle Arten – Salad: all kinds
Nachspeisen (Desserts) – Desserts:
Kastanienreis (Maroni) mit Schlagobers (Sahne) – Sweet chestnut with whipped cream
Baiser mit Schlagobers (Sahne) (Windbäckerei) – Meringue with whipped cream
Obstsalat – Fruit salad
Kompott (alle Arten) – Stewed fruit (all kinds)
Eis = Gefrorenes – Ice cream
